Classic Californians

Napa Valley wines have always been a personal favourite. I tend to divide them into two schools - the traditional ones made before the mid-1980s and the young superstars born after that. Even though the great Judgment of Paris tasting in 1976 had put Californian wines on the world map, it wasn't until the mid-1980s when the region's wines were undiscovered by new markets and encouraged more people to enter the wine business....

How to seduce a teetotaler

People do get a bit spoilt in Hong Kong, especially when good bottles are being opened on a regular basis. A recent hot pot night saw a modern legend’s cork popped. If there is one Bordeaux that I’d like to use to seduce a teetotaler, it’s probably Pichon Lalande 1982. This is a wine that almost never fails as long as sourced from the right place. The expressive nose is filled with jammy dark cherries, sweet cedar, smoke and minerals. It gives the most silky sensation on the mouth that can easily be mistaken for a Merlot-dominated wine. It is medium to full-bodied and has a seamless finish. The wine has been ready for a number of years but if stored properly it should have no problem to stay at this level for another 5-10 years. A perfect wine! ...
